1lb boneless chick thigh
0.5 cup dark soy sauce or tamari
0.25 cup mirin
2 tbsp sake or dry sherry
1 tbsp brown sugar
2 garlic cloves peeled and smashed
0.5 tsp grated fresh ginger
green onion for garnish
cut chicken into 1" pieces
combine in saucepan soy sauce, mirin, sake, sugar, garlic, and ginger
simmer until thickened ~7 minutes
reserve 2 tbsp for serving
pour sauce over chicken
cover, chill for 1-4 hrs
soak wooden skewers for 1 hr
preheat grill or broiler
thread chicken pieces
grill 3 min
turn
grill 3 min
serve with reserved sauce
garnish with green onions
