Whole Grain Pancakes
1 cup whole-wheat flour
¾ cup all-purpose flour
½ cup cornmeal
¼ cup rolled oats
2 tsp baking powder
1 tsp kosher salt
½ tsp baking soda
2 cups buttermilk, plain yogurt (not Greek), or milk
3 large eggs
¼ cup butter, melted
clarified butter, oil, or other fat
1 tsp honey
Maple syrup, for serving
mix flours, cornmeal, oats, baking powder, salt and baking soda
make hole in middle of mix
mix buttermilk, eggs, melted butter and honey
mix entire mixture
Heat a griddle over medium heat
add fat to pan
¼ cup per pancake
cook until bubbles form and start to burst
flip
cook until brown on both sides
reduce temperature on next batch
