Sweet Potatoes

3 lb jewel sweet potatoes cut into 1/2" pieces
3 tbsp olive oil

put potatoes in a pot and cover with water
heat water to 160°F (71°C)
cover and set aside for 1 hour

400F
drain potatoes
in large bowl toss with oil and season
roast 15 min
flip, roast another 15 min
