Skillet Fried Potatoes

1 lb red or yukon gold potatoes
2 tbsp olive oil
1 tsp fresh thyme or rosemary
1 tbsp butter (optional)
peel and cut potatoes into 3/4" pieces
cast iron heat oil medium
arrange potatoes, season
cover and cook 15 minutes
chop herbs
uncover, flip, season
heat medium-high, cook uncovered 5-10 min until browned on all sides
add herbs and optional butter, stir 1 min
taste, reseason
