Sausage and Pepper Pasta
1 lb rigatoni
4 tbsp olive oil
1 lb mild Italian sausage
1 lb broccoli
2 yellow bell peppers
3 cloves garlic
2 tbsp tomato paste (optional)
2 tbsp lemon juice
0.75 c torn basil (optional)
0.5 c parmesean (optional)
cook pasta 2 minutes shy of directions
reserve 1 cup pasta water
drain pasta
meanwhile
heat 2 tbsp oil in large skillet over medium heat
brown sausage
remove sausage
add 2 tbsp oil, broccoli, garlic, peppers, season
cook, stirring often 8 min
add tomato paste 1 min
add pasta, 0.75c pasta water
add 0.5 c parmesean (optional)
add lemon juice
stir in basil
serve with parmesean
