Salmon
1 lb salmon filet
olive oil
lemon
take salmon out of fridge 15 minutes before you want to cook it
pad dry salmon with a paper towel
remove any remaining small bones
puncture salmon skin all over with tip of a very sharp knife or make three large cuts across just the skin
generously salt and pepper all sides of the salmon
preheat pan on medium high
when very hot add olive oil
place salmon skin side down in center
when looking at side of salmon look white half way up flip with thin metal spatula
cook until 145F
serve and squeeze some lemon juice on top
