Reverse Sear Steak

1.5" thick steak

  1. Night before generously salt and pepper steak. Put in fridge on wire rack on baking sheet.
  2. For temperature and timing consult chart. Place steak rack and sheet directly in 250 degree oven.
  3. Heat cast iron to high heat. Add tallow or butter.
  4. Sear steak 45 seconds on each side.
  5. Serve immediately, no need to rest.

Med Rare 115°F 130°F 25-30 min
Med 125°F 140°F 30 min
