Reverse Sear Steak
1.5" thick steak
- Night before generously salt and pepper steak. Put in fridge on wire rack on baking sheet.
- For temperature and timing consult chart. Place steak rack and sheet directly in 250 degree oven.
- Heat cast iron to high heat. Add tallow or butter.
- Sear steak 45 seconds on each side.
- Serve immediately, no need to rest.
