Prime Rib
for 6 lb roast:
kosher salt: 3 tbsp
black pepper: 3 tbsp
fresh thyme: 2 tbsp or dried: 2 tsp
fresh rosemary: 2 tbsp or dried: 2 tsp
- Day before trim fat, season.
- Preheat Traeger to 250F.
- Cook until 120F, about 2.5-3.5hrs. Remove from grill.
- Turn Traeger up to 450°F. Cook 7 min, rotate, cook 7 minutes until 130°F for medium-rare or your desired temperature.
- Rest for 30 minutes before slicing.
