Pita

2 tsp active dry yeast
0.5 tsp sugar
35 g whole wheat flour (0.25 c)
240 g unbleached all purpose flour (2.5 c)
extra all purpose flour for dusting
1 tsp kosher salt
2 tbsp olive oil
makes 8
pour 1 cup lukewarm (105-115F) water in mixing bowl
stir in yeast and sugar
whisk in whole wheat flour and 35 g (0.25c) of all purpose flour
put bowl in warm (100F) place uncovered until bubbling (15 min)
with wooden spoon stir in salt, oil, remaining flour
dust with flour, knead in bowl for 1 min
dust work surface
turn onto work surface, knead 2 min until smooth
cover, let rest 10 min
knead 2 min
clean mixing bowl, put dough back in
lid on bowl
put in warm (100F) place
leave until dough doubles in size (1 hr)
heat oven 475F
put baking steel on bottom
punch down dough and divide into 8 equal sized pieces
form each into a ball
put on work surface and cover with damp towel for 10 min
in batches flatten balls into 8" diameter (1/8" thick)
bake for 2 min on baking steel
flip and cook 1 min
put in basket covered in towel
