Pinto Beans

1 lb (about 2.25 cups) dry pinto beans
1 medium onion, cut in half
2-4 large garlic cloves, minced
1 bay leaf
3/4 tsp baking soda
salt

soak beans in 6 cups water, 1.5 tsp salt
4 hrs - overnight
or 5 min pressure cook with natural release

reusing soak water will result in better texture but more gas
place beans and water in large pot, if using fresh water add 1.5 tsp salt
add baking soda
add onion
bring to boil
skim off foam
add garlic, bay leaf
bake 300F 1 hr
remove onion, bay leaf
