Mushroom Stir-Fry
1 lb cremini or button mushrooms
8 oz shitake stems removed
2 cups broccoli cut into bite-size pieces
3 tbsp oil
2 tbsp garlic minced
2 tbsp ginger minced
1 large yellow onion sliced
2 carrots peeled and roughly chopped
2 ribs celery roughy chopped
2 tbsp soy sauce
1 tsp cornstarch
0.25 tsp crushed red pepper
0.5 c chopped green onion
boil broccoli for 2 minutes then drain
large skillet medium high
add oil
add garlic and ginger and cook 15s
add onion and cook 3-5 min
add mushrooms and cook 2-3 min
add carrots and celery and cook 5-7 min
add broccoli and cook 5 min
disolve cornstarch into soy sauce
stir into pan
add pepper, crushed red pepper
server over rice
top with green onion
