Dairy-Free Meatloaf Recipe
Ingredients:
1 lb (450g) ground beef (or a mix of beef and pork)
1/2 cup breadcrumbs (ensure they’re dairy-free)
1 medium onion, finely chopped
2 cloves garlic, minced
1/4 cup ketchup (plus extra for topping)
2 tbsp Worcestershire sauce (ensure it’s dairy-free)
1 tbsp Dijon mustard (optional)
1 large egg, beaten
1 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika (optional)
1/4 tsp dried oregano (optional)
2 tbsp fresh parsley, chopped (or 1 tsp dried parsley)
Instructions:
Preheat oven to 350°F (175°C). Grease a loaf pan or line a baking sheet with parchment paper.
Prepare the meat mixture:
In a large mixing bowl, combine the ground beef, breadcrumbs, onion, garlic, egg, ketchup, Worcestershire sauce, Dijon mustard, salt, pepper, paprika, oregano, and parsley.
Mix everything gently until just combined, being careful not to overwork the meat mixture.
Shape the meatloaf:
Transfer the mixture into a greased loaf pan and shape it into a loaf (or shape it by hand on a lined baking sheet).
Add the ketchup glaze:
Spread a thin layer of ketchup on top of the meatloaf for extra flavor.
Bake:
Bake the meatloaf for 50-60 minutes, or until the internal temperature reaches 160°F (70°C).
If the top is browning too quickly, cover it with foil during the last 15 minutes of baking.
Rest and serve:
Allow the meatloaf to rest for about 10 minutes before slicing.
