German Potato Soup
3 lb russet potatoes peeled and diced
1 large yellow onion chopped
2 celery stalks chopped
2 medium carrots peeled and chopped
1 tbsp + 1tsp olive oil
8 cups chicken broth
1/3 cup parsley chopped
1/3 cup heavy cream
1/4 tsp nutmeg (optional)
green onion or chives finely chopped as garnish

large pot medium high
add chopped onion for a few minutes
add celery, carrots, potatoes, cook for 4-5 min until onion transparent
add broth and parsley
bring to boil
reduce to gentle boil, cover
simmer 30-40 min until vegetables are tender
puree with immersion blender
add cream and nutmeg
add salt, pepper to taste
cook for additional 7-10 min
top off with onion
cook sausage separately
top soup with sliced sausage and green onion
