Dinner Rolls

1.5 tsp instant yeast
2 tbsp sugar
1 cup warm water
1 egg
2 tbsp olive oil
1 tbsp lard
1 tsp salt
3 cups all-purpose flour
Put yeast, sugar, warm water into stand mixer
Sit for 5-10 min until it foams
Add egg, oil, salt, flour, knead until dough is smooth and slightly tacky
Cover the dough with a damp towel
Let it rise for one hour in a warm place or until doubled in size
Grease bottom and sides of large cast iron pan
Punch dough down and scrape out with rubber spatula dough to get all
Shape into 14-16 balls, put in pan
Let rise in a warm place for one hour or until doubled in size
Preheat oven convection bake mode 325F
Bake for 20 minutes or until slightly brown
Brush tops of rolls with lard
Let sit for 5 minutes until moving to a cooling rack
