Chicken Tikka Masala

Curry

1 tbsp garam masala
2 tsp ground tumeric
2 tsp ground cumin
1 tsp paprika, 1/2 tsp cayenne
1 1/2 tsp salt
1 tsp ground pepper
1 1/2 cups whole-milk yogurt
2 tbsp lemon juice
6 clove garlic, grated
2 inch ginger, grated
2 lb boneless, skinless chicken thigh, quartered
2 tbsp oil or ghee
1 large yellow onion, chopped
3 tbsp tomato paste
1 28 oz can crushed tomatoes
3/4 cup heavy cream
1 1/2 chopped cilantro leaves

spice mix: in small bowl combine garam masala, tumeric, cumin, paprika, salt and pepper
in bowl whisk 1 cup yogurt, lemon juice, half garlic, half ginger, half spice mix
toss with chicken, cover, chill 4-8 hrs
large pot over medium high heat, add onions 5-8 min until light brown
add tomato paste, remaining garlic, ginger, spice mix, 2 min
add crushed tomatoes, cream, 1 cup water
season with salt and pepper, scrape pot bottom
simmer, then reduce to medium-low 20-25 min
broil chicken on rack 6" from broiler 5-7 min, then flip 2-3 min
put chicken in sauce, add 1/2 cup yogurt
simmer 10-15 min
serve, top with cilantro
