Bolognese
1 tbsp olive oil
4 tbsp butter
0.5 c chopped onion
0.5 c chopped celery
0.5 c chopped carrot
0.75 lb ground beef chuck or 1 part pork, 2 part beef
1 c whole milk
1/8 tsp nutmeg
1 c dry white wine
1.5 cups canned Italian plum tomatoes
1.25 lb pasta
grated parmesean cheese for serving
heat very large enameled pot to medium
add 1 tbps olive oil, 3 tbps butter
add onion until translucent
add celery, carrot
cook 2 min
add beef, large pinch of salt and pepper
crumble meat, stir until no longer red
add milk
simmer and stir until evaporated
add nutmeg
add wine
simmer and stir until evaporated
add tomatoes
when bubble turn down to very lazy simmer
cook uncovered for 3 hrs
stir occasionally
add 0.5 c water when necessary
in end there should be no water
taste and correct for salt
toss with cooked pasta and 1 tbsp butter
serve with parmesean
